- 1–2 ripe Hass avocados
- 1 lime (juice only)
- 1 egg per toast (over easy, sunny-side up, or however you prefer)
- 2 small radishes, thinly sliced
- 2 small tomatoes, sliced
- A handful of microgreens (or other tender greens, like spinach)
- Bread of your choice, toasted (I’m using homemade sourdough—here’s my same-day sourdough recipe)
- Butter, for cooking the eggs and spreading on toast
- Salt and pepper, to taste
Step-by-Step Instructions
1. Toast the Bread
- Slice your bread into thick pieces.
- Toast until golden.
- Spread a little butter on the hot toast for extra flavor.
2. Cook the Eggs
- Warm a skillet over medium heat with a pat of butter.
- Crack in your eggs.
- Season with salt and pepper.
- Cook to your desired doneness (over easy, sunny-side up, etc.).
- Set cooked eggs aside.
3. Mash the Avocado
- Halve the avocados and remove pits.
- Scoop the flesh into a small bowl.
- Add a pinch of salt and a squeeze of lime juice.
- Mash with a fork until you reach your preferred consistency (chunky or smooth).
4. Slice Your Veggies
- Radishes: Use a mandoline or a sharp knife for thin, even slices.
- Tomatoes: Slice into rounds.
5. Assemble the Toast
- Spread mashed avocado on each buttered toast slice.
- Arrange thinly sliced radishes and tomato slices on top.
- Place a cooked egg on each toast.
- Garnish with a handful of microgreens (or any other tender greens).
