Color Changing Magic Lemonade Using Thai Blue Butterfly Pea Flowers

Thai Blue Butterfly Pea Lemonade (Magic Color-Changing Lemonade)

If you're looking for a refreshing, visually stunning, and antioxidant-packed drink, this Thai Blue Butterfly Pea Lemonade is just the thing! This "magic" lemonade transforms from deep blue to vibrant purple or pink when you add lemon juice, thanks to the natural pH-sensitive properties of butterfly pea flowers. Not only is it fun to make (and a hit with kids), but it's also loaded with antioxidants that support skin, hair, and overall health.

Ingredients:

For the Simple Syrup:

  • 1 cup water
  • 1 cup white sugar or preferred sugar subsitute. I like allulose because it does not spike blood sugar levels and its a pre-biotic. I get it from Amazon HERE

For the Blue Butterfly Pea Tea:

  • 1 big handful dried Thai Blue Butterfly Pea flowers. I grow my own flowers and dry them. You can find dried flowers on Amazon HERE.
  • 4 cups of hot water

For the Lemonade:

  • Fresh lemons (approximately 1 ½ lemons per cup of lemonade)
  • Ice cubes
  • Optional: Crushed fresh herbs like mint or lemon balm for extra flavor

Directions:

Step 1: Make the Simple Syrup

  1. Combine 1 cup of water and 1 cup of sugar or sugar subsitute in a small bowl.
  2. Stir until the sugar is completely dissolved. Set aside.

Step 2: Brew the Blue Butterfly Pea Tea

  1. Bring 4 cups of water to a boil in a kettle or pot.
  2. Add a handful of dried butterfly pea flowers to a bowl.
  3. Pour the boiling water over the flowers and steep for 15-20 minutes.
  4. Strain out the flowers, leaving behind a vibrant blue tea. Set aside to cool.

Step 3: Prepare the Lemon Juice

  1. Juice fresh lemons until you have enough for your desired number of servings.
    Tip: Use 1 ½ lemons for every cup of lemonade you plan to make.

Step 4: Assemble the Lemonade

  1. Fill a tall glass with ice cubes. Add crushed herbs like mint or lemon balm if desired.
  2. Pour the cooled butterfly pea tea into the glass, filling it about ⅔ full.
  3. Stir in a few spoonfuls of the simple syrup, adjusting to your preferred sweetness level.
  4. Slowly pour the lemon juice over the tea and watch the magic happen as the color transforms from blue to purple or pink! Serve immediately to enjoy the vibrant colors and refreshing taste.
