Garlic Butter Yuca aka Cassava Recipe

Garlic Butter Sauce Yuca aka Cassava

This is my recipe for yuca aka cassava in a garlic butter sauce. Not only is Yuca an easy to grow high yielding food crop, but it is super delicious as well. I encourage you to try this recipe out before deciding to grow yuca in your own home backyard garden.

Ingredients

8 lbs frozen or fresh yuca roots peeled

2 lbs butter

1/3 cup minced garlic

6 sliced onions

2TBS salt

1 cup chopped cilantro (optional)

1/3 cup lime or lemon juice, or white vinegar

 

Directions

1. Boil the yuca until soft. Frozen yuca usually takes 30-45 minutes to boil.

2. Melt butter with the garlic. Then add onions, salt, cilantro, and choice of lime or lemon juice, or vinegar. Cook on medium heat until the onions have softened up.

3. Taste the garlic butter sauce and add more flavor or seasoning to taste.

4. Place the yuca in an oven safe dish. Try to pull out any of the hard middle stem bits out if you can.

5. Pour the garlic butter sauce over the yuca.

6. Cover the yuca with aluminum foil. Bake at 350F for 30 minutes.
