Yard Long Bean Mushroom Stir Fry Recipe
This is my favorite recipe for using up a lot of fresh yard long beans harvested from my garden. This dish requires only five ingredients and cooks in 5-10 minutes.

Yard long beans are a fantastic crop, especially in the summer, as they withstand harsh weather conditions far better than standard green beans. They come in several colors including dark green, light green, red, purple, and even mosaic varieties. No matter the color, they taste the same. Besides their resilience, yard long beans are incredibly nutritious and can be used in a variety of dishes.
Ingredients
A bunch of yard long beans - wash, cut the top off, and cut into 2-3 inch long pieces.
24 ounces of mushrooms - I prefer to use shitake mushrooms in this dish but you can use any kind of mushroom. Wash, dry, and slice the mushrooms.
1/2 cup of Hoisin sauce
1/2 cup of sesame oil or use whatever cooking oil you prefer
3 TBS minced garlic
Optional - sesame seeds & chopped cilantro as a garnish
Directions
1. Start by marinating the mushrooms. Mix the hoisin sauce, sesame oil, and minced garlic together in a large bowl. Add the mushrooms and mix so it is evenly coated. Set aside and allow to marinate at room temperature for 30 minutes minimum or up to 2 hours.
2. Prepare the yard long beans by cutting off the very top portion which tends to be woody. Then cut the beans into 2-3 inch long pieces. Place the chopped beans in a bowl and set aside until the mushrooms are done marinating.
3. Start cooking once the mushrooms are done marinating. Heat a wok or large skillet on medium-high heat. Add the marinated mushrooms, including any liquid from the marinade. Stir fry the mushrooms for about 5–10 minutes until they start to soften up. Next, add the chopped yard long beans to the wok. Continue stir frying for another 5 minutes until the beans are cooked through.
Optional - garnish with sesame seeds or chopped cilantro for added flavor and visual appeal.
Serve the yard long bean and mushroom stir fry over a bed of rice. It pairs well with teriyaki-flavored beef.
