The skin of these fruits is a deep purple color and it's really thin and delicate. Inside, the flesh is smooth and tender, with only a few seeds and a mildly sweet taste. You don't need to cook them for long. I recommend you pick these when they're young fruits about 4 inches long for the best flavor and texture. This eggplant grows in bunches that resemble long fingers. I like to grow the smaller sized version of veggies because they are faster to start producing and mature. This is an advantage if you garden in areas with extreme weather, or high disease/pest pressure. Its nice to grow quickly and harvest quickly.

PLANTING
Germination: 10-15 days. To speed up germination I recommend using a heat mat.
Seed Sowing Depth: 1/4” deep
Sowing: I highly recommend to start in pots in doors with a heat mat 6-8 weeks before your last frost date. If you gardening in Florida, we kind of have two opportunities to grow eggplant per year. You can start them in doors around July 1st and transplant into the garden end of September for fall harvest.
Days to maturity: 70 days from transplanting into the garden
