The root system is approximately 1.5" by 2.25". The leaves/stems can be 4-5 inches tall. Plants are grown in 72 cell trays so that they will be rooted but small enough for efficient shipping. Galangal is a tropical rhizome related to ginger and turmeric, known for its sharp, citrusy, and slightly piney flavor. It is a staple in Southeast Asian cuisine, particularly in Thai, Indonesian, and Malaysian dishes. Commonly used in soups, curries, spice pastes, marinades, and stir-fries, galangal adds a distinct aromatic quality to foods. It can also be steeped in hot water to make a soothing tea. To use galangal, the tough outer skin should be peeled off, and the rhizome can be sliced, chopped, grated, or ground into a paste. Fresh galangal can be stored in the refrigerator or frozen for longer shelf life, while dried or powdered forms are also available.
Galangal is propagated thru rhizomes. I sprout rhizomes in "plant plug" sizes. ***Please note that sometimes I have to trim the leaves to fit in the shipping box which does not harm the plant- they will grow back quickly***. I like to plant galangal in grow bags to control their spread. They spread under ground thru their rhizomes. Plus it is easy to dump the grow bags at harvest time. You can start harvesting pieces of rhizome as needed in about 6 to 9 months.
Galangal is a tropical plant. It is perennial in garden zones +9, or where the ground doesn't freeze. If the ground freezes, it will kill the rhizome. Plant them in containers if your ground freezes and bring in doors once temperatures drop below 50F. Galangal plants go dormant during the winter and the top vegetative growth will die back. It will start sprouting new growth when spring arrives. Plants can get as tall as 4-5FT. If you bring it in doors, it is ok to cut the stems down if you have to. They thrive in wet soils and shady spots.
How to Plant
I recommend that you plant the plug in a 1 gallon container so you can monitor its growth. Use potting mix or compost. Once it has developed a bigger root system, you can plant outside or pot up.
