Instructions for Sowing Green Globe Artichoke Seeds:
Prepare the Seeds: To help your seeds sprout, place them in damp sand and refrigerate for 2 weeks. This process, called cold stratification, improves germination rates.
Sow The Seeds: Garden Zones up to 8 can sow seeds indoors 8-12 weeks before your last spring frost date. Garden zones 9 and up should sow seeds indoors 8-12 weeks before your target date to plant your fall garden. In hot climates it is better to plant artichokes in fall so it grows to maturity through the cooler months of the year, or winter and spring. Sow the seeds indoors in 4-inch pots, 1/4 inch deep, and keep them in a room that stays between 60-70°F. It takes 10-20 for the seeds to germinate.
Care for Seedlings: Once your seedlings have grown several leaves, expose them to cooler temperatures (below 50°F) for 12-20 days. This step, called vernalization, tricks the plants into thinking they've experienced winter, which helps them grow better.
Transplant Outdoors: Garden zones up to 8 can transplant the seedlings once you are past your last spring frost date, Garden zones 9 and up should transplant at the very end of Sepetmber once fall gardening has begun. Space them 48 inches apart, with rows 64 inches apart for plenty of room to grow.
Harvest: Harvest your artichokes when the petals are still closed, and the heads are about 4 inches across. Cut them off the plant, leaving about 3 inches of stem attached. For the best flavor, use them right away, or store them in the fridge where they’ll stay fresh for up to five days.
