Yacon is a tropical root crop that goes by many other names, such as Earth Apple or Pear of the Earth. It is a perennial plant native to the Andean region of South America. Yacon is cherished for its tuberous roots, which are crisp, juicy, and mildly sweet, resembling the taste of apples and pears. Yacon tubers offer a refreshing and delightful taste, making them a fantastic addition to various culinary creations. Their subtle sweetness adds a natural touch to salads, stir-fries, juices, and even desserts. The tubers are low in calories, and contains high amounts of potassium, fiber, and antioxidants. It contains a natural sugar called fructooligosaccharides (FOS), which has a minimal impact on blood sugar levels. Yacon plants require a frost-free environment and thrive in well-draining soil. They take 5 to 9 months of growing time to be ready for harvest.
